Winter’s nearly over, but it’s still a little chilly. So why not try a moment of warmth and togetherness with this comforting dish that’s easy to make at home? La Chope proposes the perfect recipe for Welsh rarebit…
Ingredients
Serves 2:
- 2 slices of farmhouse bread
- 2 slices of ham
- 125 ml of northern-style beer (stout, lager or pale ale)
- 400 g of grated red Cheddar or Cheshire cheese
- Mustard
Method
Toast the bread, wrap each piece in a slice of ham and place them in a gratin dish or in 2 ramekins.
Heat the beer in a saucepan, then slowly add the grated cheese and stir constantly with a wooden spoon until the cheese has melted. Add the mustard.
Chef’s tip
To ensure you obtain just the right texture – neither too thick nor too runny – do not add all of the beer to start with, but keep a little aside to add at the end if needed.
When the mixture is nice and smooth, pour it into the dish(es) containing the toast and ham.
Brown in the oven for a few seconds, taking care not to burn the cheese, which should be just golden brown. Serve straight from the oven with a salad (or chips).
