It’s sunny and it’s hot. Two good reasons to enjoy a nice cold salad, especially when it comes with delicious burrata, an Italian cheese similar to mozzarella, but with a quite different texture. Give your plate a summery feel with this recipe suggested by Terre de Fromages

Ingredients

Serves 2

  • 6 prime-quality tomatoes, for example from “Le jardin de Rabelais”
  • 10 cl of good-quality extra virgin olive oil
  • Balsamic vinegar
  • 3 fresh basil leaves
  • Pine kernels
  • 1 Burrata cheese

La recette

Cut the tomatoes into round slices.


Crush the pine kernels in a salad bowl, add 2 tablespoons of olive oil and 1 tablespoon of balsamic vinegar.


Chop the basil leaves, mix the tomatoes with the vinaigrette.


Cut the burrata into two halves and serve with a spoon.
